Catalan cream

Ingredients (for 4) :

  • 6 egg yolks

  • 1 litre of milk

  • 300g of sugar

  • 65g of cornflour

  • 1 lemon

  • 1 cinnamon stick


Put the milk (except for ½ a glass) in a saucepan along with the sugar, egg yolks, lemon zest, and cinnamon stick.
Stir with a wooden spoon and bring to the boil.
Remove from the heat. Mix the cornflour and the ½ glass of milk together, add to the mixture, then whisk until it thickens.
Pour the mixture into the ramekins and leave to cool.
When cold sprinkle with sugar and caramelise with a torch. This will give the surface a golden colour, making it even more appetising and tasty. If you do not have a torch you can place it under the grill.
